It’s time for another Monday Meet Up…Christmas-Style!
Since today is Christmas Eve,
and so many of us will be baking,
cooking, and sharing food….
I thought I’d share a brand-new
recipe that I just tweaked around
to make AMAZING.
You will thank me once you taste these suckers!

I present to you….

These began as Crack Muffins-
which are actually “Monkey Muffins”
But once you eat Monkey Muffins,
you can’t stop… hence my dubbing
them Crack Muffins.
Anyways… one of my girlfriends turned me on to this super yummy recipe. And during Thanksgiving time last year, I substituted the banana for pumpkin. And. It. Was. Awesome. A few days ago, I decided to make some again… And before I popped those suckers in the oven, I thought a little sea salt would be a good idea. Boy was I ever right! Needless to say, there are no more in the house…after just a couple of days. Hope you all enjoy. Xxo

Recipe: Salted Chocolate Chip Pumpkin Muffins

1/2 cup butter, softened
1/2 cup brown sugar
1/2 cup sugar
2 cups flour
1 tsp baking soda
1 tBsp cinnamon
2 eggs
1 tsp vanilla
15 oz. canned pumpkin
dash of salt
sea salt
chocolate chips
Heat oven to 350°
1. Mix: flour, cinnamon, soda, dash of salt.. set aside
2. In another bowl: Mix: sugars, butter- cream until smooth
3. Beat eggs, pumpkin, and vanilla into sugar/butter mixture
4. Combine dry ingredients and sugar/pumpkin mixture
5. Add in chocolate chips
6. Spoon into a mini muffin pan
(I use about a TBsp per muffin cup and spray the pan with Pam first)
7. Sprinkle muffins liberally with sea salt before baking
Bake 14-16 minutes
